Are you daydreaming of a getaway vacation to the beach? While you anticipate that wonderful atmosphere of saltwater and brisk air, try one of these recipes to bring a little taste of the coast to your house.
Shrimp Salad
½ cup mayonnaise
¼ cup minced onion
½ cup minced parsley
¼ cup minced cilantro
1 pound shrimp
Salt and pepper, to taste
1 stalk celery, minced
1 medium red bell pepper, minced
1 small onion, minced
1 boiled egg, diced
½ tsp. paprika
Lettuce leaves
Crackers
Boil, peel and devein the shrimp; coarsely chop.
In a large bowl, combine the mayonnaise, onion, parsley and cilantro and mix well. Add the chopped shrimp, salt, pepper, celery, bell pepper, onion and egg and combine well. Refrigerate to chill.
Place each scoop of shrimp salad on a lettuce leaf and sprinkle the top with paprika. Serve with salty crackers.
Crab Stew
Butter
1 medium onion, chopped
2 cans evaporated milk
2 cans cream of celery soup
½-gallon milk
Salt
Pepper
1 tsp. Old Bay Seasoning
Minced, cooked crabmeat, as desired (I use canned)
Sauté the onion in butter. Add the evaporated milk, soup, salt, pepper, seasoning and crabmeat. Stir in the ½-gallon of milk and simmer until thoroughly heated. Serve hot with crackers.
Pickled Shrimp
2 lbs. shrimp
1 TBSP dry mustard
1 TBSP red pepper
3 TBSP celery seed
1 TBSP salt
1 large onion, sliced
Vinegar
Peel, devein and wash the raw shrimp. Place the cleaned shrimp in a non-metal pot and add the remaining ingredients. Cover all the ingredients with vinegar and boil 10 minutes. Cool and refrigerate. Chill at least 48 hours before serving.
Zesty Shrimp Dip
1 pound shrimp
1 8-oz. block cream cheese, room temperature
1 small onion, chopped
½ cup mayonnaise
Juice of one lemon
Dash hot sauce
Dash Worcestershire sauce
Salt and pepper, to taste
½ tsp. paprika
1 small clove garlic, finely minced
Cook, peel and devein the shrimp. Place the cooked shrimp in a food processor and pulse until pureed. Add the remaining ingredients and process to blend well.
Serve with crackers.
