It's that time of year again! Days are hot and steamy, and spending time at the river, lake or ocean sounds like a great way to enjoy your vacation time. Are you looking for something different to prepare for your family's vacation meals this summer? Any one of these recipes will surely hit the spot!
Fruity S'mores
Choose your favorite flavor graham cracker: honey, chocolate or cinnamon. Place your choice of two tablespoons of strawberry jam, peanut butter or cream cheese or a piece of chocolate candy on a cracker. Top with your choice of a few slices of strawberry or banana or a few blueberries. Roast a marshmallow and place over the fruit. Top with another graham cracker. Press lightly. Enjoy!
French Toast,
RV-style 1 egg 5 egg whites 11/2 cups of low-fat milk -cup sugar 1 TBSP vanilla extract 1 tsp. cinnamon Powdered sugar 8 slices of white or whole-wheat bread Combine and whisk together
the egg, egg whites, milk, sugar, vanilla extract and cinnamon in a medium bowl. Spray a frying pan or griddle with non-stick spray and preheat to medium high heat.
Soak the bread slices in the egg mixture until moistened and place on the prepared griddle or frying pan. Cook until the bottom of the bread is browned; flip with a spatula and cook the other side. Sprinkle with powdered sugar and serve warm.
Vacation Omelets
For each omelet you plan to prepare, you will need a quartsize zip-lock freezer bag and two large eggs.
Crack two eggs into a freezer bag and shake to combine them. Add salt and pepper to taste, if desired.
To each bag, add your choice of the following: cheese cubes; cooked, cubed ham or crumbled bacon; chopped onion, bell pepper and/or tomato; or your favorite omelet ingredients. Incorporate items into the eggs. Remove all of the air from the bag and zip it closed. Place the freezer bag in a pot of water that is at full boil for 13 minutes. Open the bag and the omelet will roll out easily.
Six to eight omelets can be prepared at one time, if you use a large pot of boiling water. Fresh fruit makes a nice accompaniment to omelets.
