As Christmas approaches, I would like to offer a few “holiday cooking” tips – not because I am such a great cook – but because I have made a few mistakes.

First, be sure to take your turkey/ham out several days before the holiday to defrost in the refrigerator. I thought mine was defrosted one year, but discovered it wasn’t when after four hours of cooking, I tried to cut it. It was still frozen inside with only an hour left until meal time. Worse Thanksgiving meal ever!

Always cover your turkey/ham with aluminum foil or roaster pan top. You can remove it to brown the meat a little just before taking it out of the oven. Otherwise it will “pop” juice all over. Eating in smoke-filled kitchen is not much fun and neither is cleaning the oven!

Always make sure the plate/pan your turkey/ham is sitting in for carving is secure. There is nothing like having to clean up hot turkey/ham and grease off your kitchen floor before everyone can eat what is left of the turkey/ham that didn’t fall on the floor!

Always pay careful attention to cake recipes. If it says “self-rising” flour, don’t use “all purpose” and vice versa. The cake just won’t be the same!

Never try to make your own pie crust unless you are a chef. Your pie might end up looking like a pizza and get a “what’s that” reaction!

And, at my house – always chop the onions for the dressing/ stuffing up in a food processor. This way no one can “see” them in the dressing/stuffing. And never admit to using a boxed stuffing mix and cream of chicken soup along with your homemade corn bread to make the dressing/stuffing. What they don’t know won’t hurt them!
