Country Cooking With Sue Davis

Ground beef is a staple for “country cooking.” So, I’ve included two recipes in this week’s column using ground beef that I think you will enjoy. The Cheeseburger Casserole is an alternative to the “box version” and the Taco Spaghetti is a great way to spice up regular spaghetti. Top the meal off with Cheese Biscuits in a Loaf.

Cheese Burger Casserole

1 lb. ground beef
¼ c. chopped onion
¼ c. chopped green pepper
1 – 8 oz. can tomato sauce
¼ c. catsup
1/8 t. pepper
½ lb. sliced cheese
1 can biscuits

Brown ground beef with onion and green pepper in skillet. Drain and add tomato sauce, catsup and pepper and heat. Alternate meat mixture with cheese slices in ungreased 1½ qt. casserole. Arrange biscuits on top. Bake at 400 degrees 20-25 minutes until golden brown.

Taco Spaghetti

1 – 8 oz. spaghetti noodles
1 ¼ lbs. lean ground beef or turkey
1 – 1 oz. pkg. taco seasoning
2/3 c. water
1 – 10.75 oz. can cream of chicken soup
1 – 10 oz. can Rotel diced tomatoes
w/green chilies, undrained
1 - 8 oz. package Velvetta cheese cubed
1 ½ c. shredded cheddar cheese

Preheat oven to 350 degrees. Lightly spray a 9x9 inch pan with cooking spray. Set aside. Cook pasta according to directions on package. Drain set aside. In a skillet, cook ground beef or turkey until done. Drain. Add taco seasoning and water. Stir to combine and cook 5 minutes. Stir in soup, Velvetta and Rotel tomatoes. Reduce heat to low and cook until cheese melts, stirring constantly. Stir in cooked spaghetti and pour in dish. Top with cheddar cheese and bake for 30 minutes or until heated through.

Cheese Biscuits in Loaf

3 c. flour
1 T. baking powder
1 t. salt
¼ t. cayenne pepper
1/8 t. black pepper
4 oz. cheddar cheese, ¼ in. cubes
1 ¼ c. milk
¾ c. sour cream
3T butter, melted
1 egg, lightly beaten

Preheat oven to 350 degrees. Grease a 9x5 loaf pan with oil. In a bowl, whisk together the first 5 ingredients. Carefully stir in cheese cubes until covered in flour mixture. This will help prevent your cheese sinking to the bottom of loaf. In a different bowl whisk together remaining ingredients and fold the wet mixture into the flour and cheese mixture. Stir until just combined. Do not over stir. Spread mixture into the loaf pan and bake 45-50 minutes. Cool 10 minutes. Remove from pan and cool 1 hour before slicing.
