Country Cooking With Sue Davis

Simplicity is an “ingredient” I enjoy in any recipe! Preparing a meal doesn’t have to be complicated and time consuming to be delicious. My motto is – The simpler, the easier – the better! This week’s recipes meet those criteria. They are delicious, simple and will get you out the kitchen in flash!

Slow Cooker Rotisserie Chicken

1 – 4-5 lb. chicken, fully defrosted
2 t. garlic salt
1 t. coarse ground pepper
2 t. paprika, plus a bit for sprinkling

Clean out the inside of the chicken and pat it completely dry inside and out with paper towels. Mix the seasonings together and rub all over the chicken inside and out. Using heavy duty foil, cut two 18-inch pieces and roll each piece the long way, loosely, so the tube of foil is as long as possible. Curve it like an oven heating coil, like a flattened “s”. Place the chicken on top of the foil and sprinkle with more paprika. Cook on low for 8 hours.

Potatoes with Spring Onions

2 lbs. potatoes, peeled and sliced
2 t. salt
¾ stick butter, cut into pieces
1 c. slice spring onions, including green tops
Black pepper

Cook potatoes in water with salt for 15 minutes using just enough water to cover potatoes. Add the butter, onions, pepper and stir well. Cover and reduce heat to simmer for 10 minutes.

Chick-Fil-A Cole Slaw

4 t. distilled white vinegar
¼ c. sugar
¼ t. dry mustard
1 c. mayonnaise
1 – 10 oz. bag fine, shredded cabbage,
chopped to 1/8 inch
¼ c. finely chopped carrots

Whisk vinegar, sugar, mustard and salt together until sugar is dissolved. Add mayonnaise and whisk to mix. Add cabbage and carrots and mix to combine. Refrigerate 2 hours and serve.

Preacher’s Cake

2 c. sugar
2 c. unsifted flour
2 t. baking soda
2 t. vanilla
2 eggs
½ c. chopped nuts
1 – 20 oz. can crushed pineapple with juice

Mix all together in a 9x13 inch pan. Bake in preheated 350 degree oven for 30-34 minutes. Frost.

Cream Cheese Frosting for Preacher’s Cake
1 8 oz. pkg. Cream cheese
½ stick butter
1 ¾ c. confection sugar
1 t. vanilla
¼ t. salt

Mix together cheese and butter. Beat in sugar, salt and vanilla.
