If you are looking for a menu that will please your family, involves little clean-up, and gets you out of the kitchen fast – this week’s recipes are good choices. The “No Peek Beef Casserole” is an almost hands-free dish with little preparation involved, but with delicious results. And if you’re not an asparagus fan or have never tried it, the “Asparagus Bundles” could surprise you. The other dishes are equally easy. I hope you enjoy them.

No Peek Beef Casserole

2 lbs. all meat stew beef
1oz. envelope dry onion soup mix
4.5 oz. jar sliced mushrooms, drained
1 can cream of mushroom soup, undiluted, 10 ¾ oz.

Mix all ingredients in a 2 qt. baking dish and cover tightly. Bake in a 300 degree oven 3 hours. Do not peek! Serve over noodles or rice.

Asparagus Bundles

1 bunch thin asparagus spears, trimmed to 6 inch lengths
1-2 T olive oil
Kosher salt and pepper to taste
6-8 slices bacon, halved

Combine asparagus, olive oil, salt and pepper in a bowl. Mix with hands. Let stand a few minutes then wrap 3-4 spears with a piece of bacon. Put on ungreased baking sheet and bake at 400 degrees uncovered for 12-15 minutes until bacon is crisp.

Creamy Twice Baked Potatoes

2 medium baking potatoes
2 T. butter or margarine, softened
1 T. milk (may take more)
¼ t. salt
3 oz. pkg. cream cheese, cubed
2 T. sour cream

Pierce potatoes and bake at 375 degrees for one hour. Cook, cut a thin slice off top of each potato and scoop out the pulp. Place in bowl, add milk, butter, salt and beat until fluffy. Beat in cream cheese and sour cream. Spoon mixture into potato shells and sprinkle with paprika. Return to oven and bake uncovered at 305 degrees for 20 minutes.

Crustless Sweet Potato Pie

4 sweet potatoes, peeled, cooked and mashed
1 c. sugar
½ c. all-purpose flour
½ c. margarine
1 egg, beaten
½-1 t. almond extract
Garnish, whipped cream

Combine all ingredients in a bowl except whipped cream. Beat on medium until well blended. Pour into a greased 9 in. pie plate and bake on 400 degrees for 25-30 minutes. Top with whipped cream.
